Bhutte ka Kees




Ingredients to make Bhutte Ka Kees:
1.      4 cobs (farm fresh bhutta) of corn neither very soft nor very hard. In case cobs are not available, grind 2 cups of sweet corn available with ½ cup milk.
2.      ½ cup milk if cobs are available.
3.      ¾ cup water.
4.      2 green chilies, chopped in small pieces.
5.      1 teaspoon salt.
6.      1.5 teaspoon sugar.
7.      ½ teaspoon turmeric (Haldi).
8.      ½ teaspoon red chili powder.
9.      ½ teaspoon each of rye (mustard seeds) and Jeera (Cumin seeds).
10.  Pinch of Asafoetida (Heeng).
11.  1 tablespoon gram flour (Besan).
12.  1 table spoon grated coconut.
13.  Few coriander leaves.
14.  3 tablespoons oil.
15.  ¼ teaspoon garam masala.
How to make Bhutte ka Kees.
1.      Grate the corn cobs.
2.      Slightly heat besan with very little oil. Take care that its colour does not change.
3.      Heat oil in a frying pan.
4.      Add rye, jeera, heeng and chopped green chilies.
5.      Add grated corn and stir for 2-3 minutes.
6.      Add milk and water, salt, sugar, turmeric and red chili powder.
7.      Stir well and cover the mixture with a lid.
8.      Cook on low flame for 3-4 minutes.
9.      Put off the flame; sprinkle garam masala, decorate with grated coconut and coriander.
10.  Serve it with slice of fresh lime.
