Bhutte ki Kheer

Ingredients for Bhutte ki Kheer:
1.      2 cobs (farm fresh bhutta) of corn neither very soft nor very hard. In case cobs are not available, grind 1 cups of sweet corn available with ½ cup milk.
2.      1.5 liter full cream milk.
3.      2 teaspoon ghee.
4.      ¾ cups of sugar.
5.      ¼ teaspoon powdered cardamom.
6.      Sliced or chopped dryfruits (almonds, pistachio, Saffron, cashew).
How to make Bhutte ki Kheer:
1.      Heat ghee in a frying pan.
2.      Add grated corn to it.
3.      Roast it well until pink in color.
4.      Add milk and let the mix boil for 30 minutes.
5.      Keep stirring continuously until the mix becomes thick.
6.      Add sugar, saffron and cardamom.
7.      Keep stirring further till the sugar is dissolved.
8.      Turn off the flame.
9.      Serve hot or chilled, garnished with dry fruits.
